HORSERADISH, GARLIC & ROSEMARY ENCRUSTED ROAST BEEF

INGREDIENTS:

  • 2.5 LB Eye of Round Beef Roast, The Most Tender Grass Fed Beef
  • 2 cloves of garlic
  • 1 TBSP Prepared Horseradish
  • 1TBSP Fresh Rosemary, finely chopped
  • 3 TBSP Extra Virgin Olive Oil
  • 1 tsp Kosher Salt
  • 1/2 tsp Fresh Ground Black Pepper
  • 2 Cups Low Sodium Beef Broth, Water, or Red Wine for Gravy as desired

INSTRUCTIONS:

  • 1. Preheat oven to 350 degrees Fahrenheit
  • 2. In a small bowl, combine the garlic, horseradish, rosemary, olive oil, salt, and pepper. Then, mix all these ingredients until they form a paste.
  • 3. Add Meat to a roasting pan, spread the mixture on top of the roast, and add 1 cup of beef broth to the bottom of the pan. Place in the oven.
  • 4. Cook for approximately 1 hour. Or until the internal temperature you desire is reached. ( I like mine medium with an internal temperature of 150 degrees F.) Allow the roast to rest for 10 minutes before carving.
